This has long been one of my favorite quotes, and I find it striking how true it is. I've often thought about another quote in relation to this: “The dose makes the poison” (Paracelsus). Everyone eats approximately 3 times a day (some more, some less). When we compare the amount of food that we consume to the amount of medicine that a doctor would prescribe, it is easy to see how the choices we make concerning food add up rather quickly.

The top 7 causes of death in the US in 2010 were: (source: CDC)

  1. Heart disease: 596,577
  2. Cancer: 576,691
  3. Chronic lower respiratory diseases: 142,943
  4. Stroke (cerebrovascular diseases): 128,932
  5. Accidents (unintentional injuries): 126,438
  6. Alzheimer's disease: 84,974
  7. Diabetes: 73,831

Out of those, food has been linked as a cause for heart disease, cancer, stroke, Alzheimer disease, and diabetes. It could easily be said that food was the number 1 killer in the United States in 2010.

My Past {Food}.

Food has always played a major role in my life. Whether it was from my mother or my grandmothers, I was constantly learning in the kitchen. Ten years of 4-H and dozens of foods projects taken to the county and state fairs, helped me perfect my baking skills. I even started my own business in middle school selling freshly baked goods each week. "Baking by Lorraine" continued to expand throughout high school, until I was selling hundreds of dollars of baked goods each week. In college, I continued my business by selling baked goods over the holidays. My record is over $900 in sales on one day.

My Past {Nutrition}. 

Growing up, I always knew that I wanted to be involved in the healthcare field somehow. The only problem was that I had no interest in becoming a nurse, and being a doctor was out of the question. During my sophomore year of high school, I went to a community meeting about healthy eating and met a dietitian for the first time. Before that point, I had never even heard of dietetics. I'm not sure how exactly it happened, but before our conversation ended we were discussing dietetics as a career. I set up a meeting with her, and a couple weeks later I interviewed her about her job. All the pieces fell together perfectly and by the end of the interview, I had decided that I would become a dietitian. I've never looked back since.

My Present. 

I have a B.S. in Dietetics and Nutrition, Fitness, and Health from Purdue University. I am currently completing my dietetic internship through Saint Louis University. This program has a combined M.S. degree in Pediatric Nutrition. The goal is to graduate by next August and sit for the RD exam shortly after that! Then I will be able to sign RD after my name! :)

My Dream. 

I have a dream … of a world where there is no pain, no hurt. I have a dream of a world where people help each other and care about each other. Although I know I won’t realize this dream in this lifetime, I want to do all I can to make the world more like that. My dream is to start a nonprofit organization that provides nutrition to third world nations. Physically, emotionally, spiritually. Until I reach this goal, join me in the journey.
