Today I made some protein bites. These are incredibly easy and are great for breakfast, or snacks. The oatmeal is a whole grain that adds fiber, and the peanut butter adds some protein. Both protein and fiber help keep you full longer, making this one of my favorite go-to recipes.
Here is a little trick I've found helpful when measuring honey and peanut butter: put a small amount of oil in the measuring cup. The honey and peanut butter come right out, and you don't waste any by leaving it stuck in the measuring cup.
2 cups quick oats
1 cup peanut butter
1/2 cup honey
1 cup semi-sweet chocolate chips
1 teaspoon vanilla cinnamon (from tupperware)
1/4 cup ground flaxseed (I am all out, so I skipped this)
1/2 cup other topping such as craisins or nuts (optional)
You could also add shredded coconut if desired.
Mix it all together, and stick it in the fridge for at least a half an hour.
Use a cookie scoop or spoon to divide into small "bites" and store in the fridge.
